Many believe that this is the true home of the Chardonnay grape. Wines have been made here in the Yonne valley since the 12th century. Chablis wines range from Petit Chablis, Chablis through to Premier and Grand crus. The ageing process for these wines is very subtle, and most top producers will not let their wine anywhere near a new oak barrel. The crisp and clear wine is a fine testament to this process.
